It’s officially May and that means warmer weather, time outside, and fresh produce!! Our weekend recap:
1. This weekend was spent at home, which was wonderful! I love traveling, but I also love being at home and knowing that I get to sleep in my own bed at night. It also means that I can cook our own dinners! Friday night I decided to make something I had never attempted before: mushroom gravy! And while that might not seem like a big deal to some of you, making gravy is such a challenge for me! I try to make things “healthier” by reducing/substituting butter and flour, but you can’t do that with gravy! I’ve tried… and failed… haha. So if you have a lower-calorie gravy recipe, I’d love to have it. But until then, this recipe was delicious and an overall crowd pleaser!
2. Last week was cold and rainy, but this weekend was beautiful! I second shot a local wedding on Saturday and we could not have asked for a more beautiful day. Yay for spring and summery weather!
3. I didn’t do any cooking Saturday because of the wedding, but Sunday night Matt and I decided to make caprese salads. And they were delicious! I never buy tomatoes in the winter because they’re usually mostly white in the center without that tomato flavor punch. But we’re starting to see some plump, juicy red tomatoes now and that excites my caprese-loving side.
